RECIPE / no milk banana bread

I think many of us have been there; when we have over ripe bananas but don't want to spend the rest of the day trying to eat them all. A quick tip; you can slice the bananas into coins and freeze them. Once frozen, chuck them into a blender and you'll have a ridiculously easy 1 ingredient banana ice cream! If you're not into doing that, just make banana bread!
So here's a super easy recipe on no milk banana bread!
Ingredients
3 very ripe bananas
2 cups of self-raising flour
1/4 cup of softened butter
2/3 cups of caster sugar
1/4 teaspoon of salt
1 teaspoon vanilla (optional)
1/2 cup chopped nuts (optional)
I'm not going to lie, but the reason why I decided to make a no milk banana bread is because I didn't have any milk in my fridge! Of course, adding the milk will make the mixture a lot smoother and richer in taste but I didn't have the time to go out and buy milk so I used ingredients that everyone should have in their pantry.
The very first thing you'll want to do is preheat your oven to 175°C or 350°F. You'll also want to grease your loaf pan with butter.
In a large bowl, cream together the softened butter and sugar. Many people prefer to use an electric mixer but I personally find it easier to just use a spoon. Make sure all the granules of sugar aren't visible.
In another large bowl, mash the ripe bananas. If you prefer, use a whisk instead of a fork. Don't worry about trying to get a completely smooth mixture. I personally enjoy the chunky bits of banana, it adds a great texture!
In your creamed butter and sugar, crack in an egg and mix until combined. If desired, add in your vanilla.
Once that is combined, add your mashed banana, salt and the self-raising flour. Add the chopped nuts if desired.
TIP: If you don't have self-raising flour, just use all-purpose flour and add 1 teaspoon of baking soda.
Once all the ingredients are evenly combined, pour the mixture into your greased loaf pan. You can see here that I could've made two batches and still be able to fit it all into one pan. Make sure to leave a little bit of space on top as this mixture will rise.
Pop it into your preheated oven for about 1 hour. After 45 minutes, keep checking on it every 5 minutes with a skewer as everyone's oven is slightly different. If your skewer comes out clean, it's done!
Once it's finished baking, make sure you leave it to cool for a minimum of 10 minutes. If you try to slice it whilst it is still quite warm, it will crumble.
And there you have it! A super quick and easy recipe on no milk banana bread! Feel free to add or take away ingredients to your preference (more bananas, less sugar, etc.)
